Alastair – Co-Founder & chocolate maker
Ali co-founded Chocolate Tree with Friederike in 2005, back when we travelled the UK music festival scene with our mobile geodome chocolaterie! When Ali is not in the factory making chocolate or on a screen he can usually be found outdoors; spearfishing in the sea, climbing munros, throwing frisbees or riding a bike along the East Lothian coastline. Ali is passionate about re-wilding Scotland, and conservation of the rainforest in South and Central America, with Friederike he is a father of 2 great kids and likes to put wellbeing and health first for his family.
Friederike – Co-Founder, chocolate maker & artisan chocolatier
Friederike is the creative leader behind Chocolate Tree, she came to Edinburgh from Lübeck in Germany to do a mathematics degree before meeting Ali and starting Chocolate Tree. She makes the final decision on all our recipes. Freddy excels in her creative pursuits and in her spare time works clay in her home studio, is an avid knitter, seamstress, reader and mum. She has adopted Scotland as her homeland, and cares passionately about its future.
Graeme – Chocolate maker & chocolatier
Graeme joined Chocolate Tree in June 2022, when he had the chance to join the team and learn something new it was an easy decision to make. Since joining Graeme has been learning the full chocolate making process to produce quality chocolate products. Away from the world of chocolate Graeme enjoys watching football, cooking and walks with the dogs.
Silvia – Artisan chocolatier
Silvia joined Chocolate Tree in September 2023 after graduating in Patisserie & Confectionary at Edinburgh College, where she discovered a strong passion for working with chocolate. Silvia enjoys being involved in all aspects of the job, especially the artisan chocolates making. Some of the things she loves besides chocolate are live concerts, being in nature, writing and eating pizza – especially the one she makes with her family in Italy!
Ali – Factory assistant and tour guide
Ali joined us at the start of 2025, she chose to work for Chocolate Tree because after working in hospitality for many years she needed a change of pace. After briefly working at Chocolate Tree a few years ago she found herself drawn back to the relaxed environment and friendly vibes. Ali is packing up our chocolate and helping out where needed around the factory, she is in training to operate factory tours in the future. She loves spending time with her partner and niece, going to soft play centres and parks. She loves her cats, crochet and likes to go on long walks on nice days
Hamish – Factory assistant and chocolatier
Hamish was working in food retail and looking for a change of pace. When he heard about ChocTree, he knew it was the perfect place for him. He was drawn to the company’s commitment to sustainability and high-quality craftmanship. Joining the team in 2025 allowed him the opportunity to be part of a dedicated and innovative company. Hamish is responsible for supporting the production process, this includes helping with ingredient mixing, moulding chocolate and assisting with packaging. When Hamish is not at ChocTree, he spends most of his time playing music with his band: Polly. They practise regularly and perform at local venues whenever they can. Music is a huge passion for him.

Nicole – Hot chocolatier
Nicole joined Chocolate Tree in September 2021. Sharing our values Nicole is passionate about producing great quality products for our customers. Outside of work Nicole loves quality time with her family. She enjoys beach and woodland walks with her daughter and their dogs, musicals, reading and gardening. In addition to this Nicole is an avid and passionate advocate for animals and the environment.
