**None of the above are remelting @casaluker_oficial @callebautchocolate or @puratosgroup mass produced couverture. Unlike most of the chocolate brands visible on the supermarket, farm shop and wholefood shelves.

If you prefer chocolate that's marketed and sold as artisanal and unique, but actually all produced in the same big industrial factories overseas, then this event probably won't interest you.

This is still the first wave of real craft chocolate in the UK, where authenticity, craftsmanship and transparency are prerequisites for exhibiting at the event. It's the beginning of a beautiful expansion of the real craft chocolate and cacao scene in the UK. Hope to see you there!

New cacao origin roast test 🍫🔥

Thanks to @duffyschoc who showed us a few moons ago how to do a simple roast test on cacao. Too little and the chocolate flavour can be sour and under-developed, too long and it will taste burnt. These small Peruvian native Chuncho beans seem to come out best at 8.5 mins, a short fast roast to bring out the chocolatey flavour without losing the precious fruit and floral notes. Happy World Chocolate Day 🍫❤️ From Ali & Friederike Gower. We co-founded Chocolate Tree at music festivals in 2005, and wow what a journey it's been!

2024 has been quite a year so far, and we are just warming up 😍🔥Excited to install a drum roaster at the Knowes farm factory soon, and launch a new 70g range. We've managed to handle the cocoa crisis without compromising, and are excited to see what the rest of the year brings. A huge thank you to everyone out there supporting us and other craft chocolate makers, working from cacao and remaining independent from big industry chocolate ✊
